The right fish

We are entirely serious when we say that buying fish is more challenging than cooking it. The perfect specimen requires little more than a blast of heat, a dash of salt, a sprinkling of lemon. It is finding that perfect specimen – without catching it yourself – that takes knowledge and patience.

Fish market may overwhelm you with choices. The most important single element in buying fish is trust. Getting to know the knowledgeable and enthusiastic staff at Skandináv ház deli will improve your chances of buying consistently good fish. Fair or not, regulars get the best fish in most stores. Go in regularly and be picky; return fish if it is bad; ask a lot of questions.

Buying high quality fish is not that difficult: you have to be able to distinguish between different degrees of good and bad, to be willing to say no, to be assertive.

Checking out the fish store

While our deli is small, it is clean, free of a fishy smell, has plenty of ice and adequate drainage. Most fish keep best on ice – whole fish can be buried, but fillets and steaks do best on ice, not in it – and the melting ice must be drained away and replenished frequently.
